The fat in animal fat cells will change from solid to liquid under the action of heat.Heating animal fat reduces the viscosity of the oil and reduces its surface tension.This is the result of the movement ofthermal molecules and the result of weakened cohesion between molecules. The weakened cohesion will make the oil easy to separate out from the cells,and can make the oil droplets of a single cell converge into a large clump.At the same time,due to the difference in specific gravity,the oil and protein are separated.
